Watermelon Carpaccio

Watermelon Carpaccio

This light and refreshing dish utilizes the nutritious nature of microgreens and combines them with flavors that beat the endless summer heat of Florida! We love to pair this next to just about anything off the grill, but it stands on its own feet for a light lunch. Most of it can be prepped in advance to throw together quickly if entertaining.

What you'll need:

  • Cantaloupe Microgreens
  • 1 Watermelon
  • Pistachios with shell removed (Raw preferred but Lightly Salted/Roasted is just fine)
  • 1 Lemon to Zest
  • Crumbled Feta
  • Shiso Microgreens (If no access, substitute with fresh basil and mint)
  • Balsamic Drizzle

To Prep: 

  • Thinly slice watermelon into rectangles or squares if you're feelin' fancy
  • Take pistachios and crush in a bag
  • If using basil and mint instead of Shiso Microgreens, take several leaves of each and roll/slice into ribbons

To Make:

  • Add Cantaloupe Microgreens to base of plate or bowl
  • Layer thin sliced watermelon over Cantaloupe Micros
  • In a small bowl, combines crumbled feta, crushed pistachios, Shiso Micros (or mint/basil) and lemon zest
  • Top the combination over watermelon
  • **OPTIONAL** A pinch of Hibiscus Lime Salt from Palm Beach Salt Co.
  • Top with more Cantaloupe Micros!
  • Finishing balsamic drizzle
